Just as a distiller proudly watches his finest batch of bourbon, we at Rocky Top take pride in turning meat into a hand crafted product. We combine our own injections, rubs, and sauce to bring out and enhance the natural flavor profiles of the meat. Our process usually begins with an injection or brine, then followed by a careful coating of our Rocky Top BBQ rub, and then it is smoked for hours over peach and cherry woods that are found locally from our suppliers.
